Parenting is hard stuff! Now, I know some of you might know this already but apparently I take a while to catch on.

When I first had Cason I knew things were going to be a shocker. After all, I never really babysat growing up and never actually changed a diaper! {true story, Cason was the first diaper I changed … EVER!} The sleep deprived days of the newborn stage were manageable because of the overwhelming love I had for him. I would enjoy getting up at that 2am feeding, sitting in his room rocking in the rocking chair, watching his sweet face, and feeding him till he feel asleep. Best memories ever!

When your pregnant or in that newborn stage people are giving you all the advice in the world! I filtered almost everything through, “what works best for my family.” But I will say, one of the best pieces of advice I got was about parenting itself, the quote was “Whoever raises their voice first loses.”

I don’t know exactly what that meant until I reached the toddler stage. I knew that I wanted to be the mom that would take a deep breathe before responding and speak calmly to Cason when he was being disobedient or just being a hand full. I feel like most of the time I do that, I keep my calm and speak to him in a tender voice.

But past couple of days I’ve realized I struggle with patience.

I think part of it is Cason is changing, becoming more independent, trying to test the limits, and just wanting to do what he wants to do.

Sooooo…. yeah! It’s exhausting and incredibly repetitive to say the same thing over and over again without much change! I’ve noticed over the past week I don’t have the same patience as I did before and want that to change! Yesterday after Cason decided to dump every toy he had all over the living room I just sat on the floor, took a deep breathe and tried to remain calm all while feeling like I had a ticking time bomb inside.. “Alright buddy lets put up all our toys, we can’t take out another one until we put the other ones away.”

It’s hard, this parenting thing. And patience is most definitely a virtue, one that you have to train yourself to have! But if I remain calm and have patience, my hope and prayer is that he will have the same because he saw it modeled to him.

Ok, enough of me confessing my struggles.

How about we move on to the food?

Ya’ll! These BBQ Pulled Pork Sweet Potato Bites were dreamed up because I just really wanted BBQ, more specifically pulled pork but without the bread and grain! I’ve had a couple friends who’ve posted Sweet Potato Bites so I thought, why not put my pulled pork on a crispy sweet potato! Um.. genius!

The Pulled Pork is hands down one of my favorite recipes, it is sweetened by balsamic vinegar and dried apricots, but has a slight smoky taste from the smoked paprika. Absolutely amazing!

Topped off by a creamy whipped goat cheese and then some fresh green onions for a nice onion flavor these bite size appetizers are perfect for a get together or a game day treat!

One of the tips I have for these Sweet Potato Bites to be over the top stellar is make sure the potatoes are somewhat crispy. If they aren’t crispy, as soon as the pulled pork hits the top of these they will go soggy. So make sure those sweet potatoes are crispy before you top them with deliciousness!

Description

BBQ Pulled Pork Sweet Potato Bites are sure to be a family favorite. Topped with creamy whipped goat cheese and moist Pulled Pork with a few secret ingredients – you’ll be addicted after one!

Ingredients

BBQ Pulled Pork:

  • 23 lbs. pork loin roast {I usually trim the fat off before cooking}
  • 1 large red onion, diced
  • 3 whole garlic cloves, peels removed
  • 15 oz. tomato sauce (no salt added)
  • 1/2 cup balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 5 dried apricots

Sweet Potato Bites:

  • 2 large sweet potato, 1/4″ slices
  • 4 tablespoons olive oil
  • salt to season
  • 4 oz. goat cheese, softened
  • 2 tablespoons cream cheese, softened
  • 3/4 cup sliced green onions

Instructions

  1. In a medium bowl add diced onions, garlic cloves, tomato sauce, balsamic vinegar, smoked paprika, salt, and apricots. Gently mix together.
  2. Add pork loin to bottom of crock pot, pour balsamic mixture over pork.
  3. Cook on HIGH for 4-5 hours.
  4. Shred pork using two forks, leave pork in sauce.
  5. In a food processor add goat cheese and cream cheese. Blend until the cheese has a whipped appearance.
  6. Preheat oven to 425.
  7. Cover two baking sheets with tin foil and brush 1 tablespoon of olive oil on the tin foil.
  8. Add sliced sweet potatoes in a single layer to each of the baking sheets.
  9. Add 2 tablespoons of olive oil to a small bowl and brush on the top of the sweet potato slices. Season with salt.
  10. Bake for 10 minutes, rotate the pans 180 degrees and switch the placement (move the pan on the bottom to the top and the one of the top to the bottom) for even cooking.
  11. Bake for an additional 10 minutes, until slightly crispy.
  12. Assemble sweet potato bites: sweet potato slice, goat cheese, bbq pulled pork, garnish with green onions.
